[ltr]This is a ribeye. They’re common on almost any steakhouse menu. Bone-in, no bone…it’s fantastic. Beautiful marbling, guaranteed juicy and flavorful (unless over cooked). However…let me call your attention to the “C”shaped muscle found on the left side of this particular steak…[/ltr]
[ltr]That’s a section of the creature’s spinalis dorsi muscle. Butchers call it the crown, or cap, of the ribeye. In France it’s called a calotte steak.[/ltr]
Some of the finer butchers and steakhouse operators will trim and prepare this muscle as a separate cut. In very rare cases you may find it dry aged.
